Taste Notes

Loosely based on Sierra Nevada Pale Ale. 03/06 needs a couple of more weeks conditioning but so far so good. Bit too much body compared to SNPA - needs to be crisper. Slightly cloudy, may clear over next few weeks. Bitterness feels about right.

Notes

Added 5ml lactic (pH 5.33) followed by 1ml @ 15min pH between 5.15 and 5.2. pre-boil gravity = 1.044. @30min 1.046 (lid on). @50min 1.048 (partially covered). Boiled for 80 min - 1.057 (too long!) 2.56kg boiled off = 2.4l(est). added 500ml to bring gravity down to 1.055 Final vol in kg 7.789 = 7.38l. Crushed Crisp malt had a number of uncrushed grains. This possibly accounted for the low conversion. Run malt through mill next time... Pitched yeast a bit warm - 23deg. Had left to temp settle overnight in chest freezer set to 20deg but needed longer. Day 5 racked to new fermentor. 1.011/1.012! Added 20g Cascade in nylon bag. Bottled day 10 @ 1.011 6.822kg = 6.75L = 20.5 bottles 5.8%!!!
