Notes

Brew 1050 gravity APA prior to this. Take 2l of wort and set aside for IIIPA starter (can use DME starter instead), pitch starter with 2 x 001 yeast packs and yeast nutrient. Rack APA into secondary and then dry hop, so hop matter isn't in the trub. Pitch IIIPA onto APA yeast cake and ad starter. o2 before pitching @12c and at 12 hours, then step up temp 1c per day. Dry hop around 1025 gravity using a loose bag, for 4-5 days.
