Taste Notes

Wort taste, pre-fermentation. Sweet musty Earth tones and over ripe fruit dominant. Very complex . bready After 8 weeks lagering. Chocolate and roast forward, overall flavor intensity is mild/medium. Slightly metallic. Lacks the defining nuttiness of Paulaner Salvatore. Body is a little thin but also undercarbonated. Test carb level and add carapils if needed

Notes

Going to scale back chocolate malt by 50% and add Special B. Maybe carapils to enhance body.
