Cleveland Steam- Version 1.3 was my personal drinking favorite. 1.5 is pretty damned good too, but a lil higher gravity and I mashed a bit high, so it has some residual sweetness. Not bad, but the hops are a touch out of balance. 1.052 with slightly less than 40 IBU seems to be a sweet spot for this beer. The malt on 1.5 is on the toasty side, 1.3 less toasty. Carabrown is a cool malt that adds a unique toasty character. Version 1.5 with half the carabrown and mashed at 149-150 with 1.5 oz/5 gallons dry hop for 7-10 days would probably be spot on. Replace half the carabrown with a crystal 40/60 mix and carafa II to color as needed.
