Happy Accident

by donwyatt

This recipe was my inspiration for the most excellent IPA that I've ever enjoyed.
Can't buy Blind Pig in North Carolina so I cant even compare my results.

On brew day things didn't go so well at first.
During the boil I accidently introduced the Amarillo and Simcoe @ 75 mins then was forced to pitch the chinook as aroma.
I also batch sparged @ maybe 168.
I primaried for 2 weeks and a secondary 2 weeks. The dryhop was introduced using a nylon bag at 7 days in the secondary.
Bottle conditioned for 3 weeks resulting in perfection in a glass. This was the best IPA I have ever enjoyed - bar none. I entered my accident into the local Hickory Pro-Am competition and placed 4th out of 19.....Not bad.
1 Month later I brewed the OP's original recipe, the OP Blind Pig recipe is to be commended. The flip of the bittering and aroma hops did make an excellent and entirely different beer. I had both beers bottled and at different stages of conditioning, both were excellent. I recommend this recipe to anyone but do yourself a favor try it both ways. Prost
