Taste Notes

Sweet, carmel and toffee flavors with English hop character. This is an OK beer, not great though. Very malty. Sweet. Too sweet. Very carmelly with strong, burnt, toffee overtones. Next time, follow Basic Brewing's guidelines for Belgian candy-making


Starter made. Used 1 cup per quart of water. Steeped grains at 180 deg. for 30 minutes. Took one cup of DME and put in frying pan. Mixed about 1/2 cup of water in. On medium heat, I cooked the malt, stirring the entire time with a wooded spoon. Did this for 10-15 minutes until the malt started to darken. Once it appeared carmelized, I removed it from the heat and added water to stop the camerization and so it didn't harden. Tasted very carmel-like. Added this to the start of the boil. Problem with the burner. Did not get a good boil. Figured out that I didn't tighten the threads enough on the gas tank connection and some gas was escaping. I'm not sure it will be as bitter as I had hoped. One of the fastest starts ever, Signs of fermentation at 6 hours. Within 24 hours, foam nearly popping out the top and the lock is almost constantly bubling. At 30 hours it was coming out through the air lock. Amazing.
