Taste Notes

This is an excellent beer. Great raspberry flavor, modest sweetness, tart flavor. Far too carbonated though! Add another pound of berries and bump up the lactose to 1.5 pds. Use a 1pd. of acid malt to give tartness. Use a balance of pale malt and pilsner. Do again but use only a cup of corn sugar.

Notes

5 lbs. Raspberries (actually 7 (12 oz packs or 84 oz. total) with a little water and raise to 160 deg. for 15 minutes. Tranferred a number of times to remove bits of fruit. Finally tied a sock on the end of the transfer tube to catch bits of fruit. Worked great. Boiled lactose and ___ cups of priming sugar for 15 minutes. Very worried about the yeast. The smack pack did not rise very much. Starter didn't seem to bubble much. Could be trouble. Seemed to kick in about 30 hours with a decent rate.
