didn't have the Amarillo and Ahtanum hops I wanted so I went with what I had in the fridge. Start with 7.35 gal. First time used condtioned malt at a gap of 32 mm. on the mill. Worked pretty well. Less dust. 1000 ml. starter. Used a ration of 2.8 gal. per pd. of malt. Still had some rood at the end so raise this to 2.85 gal. per pd. next time. Efficiency only at 70%. I want 75%. Had to add a half pound atthe end to get it to 1.058. Worried about carmelizing flavors because I used very little water when I boiled the extral half pound for 15 minutes. Fermentation very hot in the basement at around 73 deg. Using the shirt and fan method and tucked an ice pack inside the shirt which I will change out daily.
