Taste Notes

Sour, lemoanide taste. Kind of an unpleasant, sour, dank odor. after a month. I'll give it a couple of more months. After 10 months, this beer is amazing! Great lemony taste. Perfect in fact. Don't change a thing.

OK. Made a Lacto starter in 1 gallon jug using 1 liter of water and 52 grams of DME. Added 1/8th of a cup of crushed pale malt and set on heating pad at medium on Wednesday, January 11th at 8:00 PM. Took about 60 hours to do something. Strange powerdy white scum on top. Looks odd. Very little co2 activity. I would add a 1/4 cup next time and give it 5 days. Perhaps apple juice next time. Add hops to mash for 90 minutes. Raise temp to 210 and cool to 70 deg. No oxygen. Add lacto starter through a funnel screen. After 30 hours, the lacto was kicking with a white frothy krausen. At 40 hours wort had turned cloudy milky white color. Hardly looks like beer. Added yeast at 54 hours. No starter with yeast. Yeast never seemed to do much of anything. Could the PH be too low and kill the yeast? Transferred at one week. Maybe I should have done a starter. Won't carbonate after over a month. Took about 2-3 months to carbonate.
