Wow! Fantastic beer. I was asked to present this at the 2012 Hombrewer's Ball. What an honor!

Notes

Dry-hop the .5 oz. Riwaka and .5 oz. Citra secondary. Water Calculation: I want to boil 6.5 gal. Used .15 gal./lb. of grain absorption equals 1.95 gal. Add this to 6.5 and you get 8.5 gal. to start (2.62 qts./pd.) Starter: 800 ml. with 4 oz. of DME 3 times, every other day. Put in fridge, poured off liquid. Battery died on themometer but beleived to mash at 152 deg. First time using 5.2. Starting gravity 1.090. Very high. Also, .5 gallons too much. Need to adjust calculation for boil. 1 gallon per hour instead of 1.5. Use 2.5 gal. per pound of malt as the base for the next calculation. About 20 hours into the fermentation and the lock is going crazy sometimes continously bubling. Had to cool it a bit by setting it on the cold concrete floor. Krausen was so high had to put on a blow off tube. Still going slightly after two weeks. Transferred off trub at 2 weeks and slowed down and cleared nicely.
