Notes

Added ~4 gallons of 125 F water to mash, settled at 122 started recirculating 10 min in. Mash pH 5.01 Temp dropped to about 115 Removed about 15 qts for decotion Heated Decoction to 150 and rest for 10 min Added about 1 gallon of 160 water to main mash; settled at 124. Boiled for 5 min added back to main mash settled at about 158 Mash pH 5.23 pulled about 7-8 qt for second decoction brought to boil and boiled for 5 min main mashed had cooled to about 140 added decoction settled to 154 Sparged with 170 deg water collected 12.3 gallons of 1.055 collected 9.5 - 10 gallons of 1.064 cooled to 70 put in fridge set to 50
