Smelled very good going into primary.

Notes

NOTE: OG Planned for this was 1.055 (I expected less efficiency so compensated with more grain in the grain bill than needed). 27 min 137.8F 4.8P 51 min 147.6F 7.9P 62 min 152.0F 9P 73 min 154.6F 11P 82 157.6 11.6P 106 min 150F/170F 13.4 FILTERED HOT WORT DOWN TO 5 MICRONS OR SMALLER (FILLED UP THE FILTER TILL IT WOULD NO LONGER DRAIN!). Copious fine white foam generated during mash....skimmed off about 1/4 gallon of thick foam....at boil was still high so added one drop to each 5 gallon pot. Boil had some issues with a towel I put under one of the induction electric stovetop and the fan could not cool enough so it errored out (E5) several times and had to be restarted. Therefore, one pot only reached 200F whereas the other pot was at a low boil (205 avg temp except boiling around heat stick). Had to add water and DME since I did not drain grains well (short on time) and was short on volume. Lost about 1.5 gallons to trub in pot because loose pellet hops clogged outtake filter. Loose hop leaves worked well in spider....but kinda a pain to deal with. Cubed and rapid chilled in Swimming pool, then outside overnight which brought them to 10F. One cube was then racked, and pitched with California Lager Yeast 2012 and the other was placed in fridge to 5C....while I spin up some remaining California Lager Yeast (3rd spin up from same starter bag kept in sterile conditions). Spun up with O2 generated by silver dollar and H2O2 in 1.5 liter flash. Yeast fed solar canned light wort from prior batches. BEER LOOKED VERY VERY CLEAR, AND COLOR EXACTLY AS TARGETED. Cold break was substainal and perfect...perhaps larger due to no hot break removal. Due to unexpected trub volume loss, the smaller of the 2 cubes was chosen for primary and put in a 5 gallon instead of a 6 gallon fermenter, sterile transfered into food bag system but it's volume is only about 3.8 gallons. I expect about 4.5 gallons from second cube. I believe if I rack them at the same time, I can fill my 3 gallon corney and a 5 gallon corney to capacity.
