Notes

This was our original Helgas Double Nickel Brew, but we changed the Hops and the Hops schedule. We added the Hops at 20-10-and 00 mins in the boil. We opted for Cascade and Cenntenial Hops. Racked on 9/14/2013 brewed again on 11/02/14 changed hops to first wort 20 - 10mins - steep/whirlpool went with 2.00 oz of mosaic at FW Racked on 11/10/14 gravity at 1.012 tastes good. will cold crash then keg xxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxx brewed 1/26/15 o.g. 1.068 racked on 1/31/15 dry hopped 1 oz crystal 2/05/15 xxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxxx brewed on 3/08/15 using american ale II yeast instead of london ale yeast I made my own version of a hop rocket I used a french press with an oz of cascade hops. I filled it with boiling wort let it steep then pressed it, then I poured it back into the boil.did this twice at end of boil. had to add 1 gallon of water for 5 gallon batch. way too much sludge at bottom of kettle lost about 1 gallon. racked on 3/21/15 bottled 3/30/15 very clear, tastes good.
