Notes

Diff from v1 (2011): Adde Chocolate malt and Munich, removed roast malt. No dry hopping or spicing. English yeast instead of S-05. Decreased boil time 75m->60m. Switched up the hops from mostly Cascade plus some Chinook at boil to Columbus/Cent mix at boil plus Cascade the rest. 6.75g mash, 2.5 sparge, target 5.25g, 1.071->1.020 (6.8%). Target 60 IBU. Hops adjusted for age- 2013 11% Columbus/Cent @ 13 months -> 9.4%, 2013 Cascade 8.8% ->7.1%. Starter - Yeast dated 12/1. Mr Malty recs a 3L starter w O2 at start, or 2.3 w intermittent shaking. I'm going to do 2L with 230g wheat DME. Wed 12/24 eve - made starter. Sat 12/27 morning - moved to fridge.
