Notes

Apple juice in gallons NOT lbs! Notes from previous batch: 06/02/2010: Obtain plastic fermenting bucket from Bolton Orchards (juice pressed 06/01/2010 - apple mix includesMutsu, Golden Del., Cortland and others). Pitch potassium metabisulphite at 1100, 6/2/2011. Need to wait at least 24 hours for effect to dissipate before pitching yeast. Take OG (11.8 Brix) and pitch yeast ~1300, 6/5/2011. Took approx. three days to get going, and proceeded slowly. Racked to secondary: 7/16/2011. No SG taken. Kegged 9/19/2011. FG: 1.000 @ 63.5 deg F (no temp correction needed). Put under ~18 PSI for 2.8 vol CO2.
