1/12/2014 ---------- Starting Gravity: 1.112 Initial Fermentation Gravity: 1.042 Started the boil with 7.25G of wort @ 1.090 gravity Spilled a bit Boiled for 1:15, reducing to about 22 quarts before adding hops Boiled for an hour after adding hops Spillled a bit After-boil volume 4.25G @ ~1.136 Added about 6 bottles of water to bring up to 5 Gallons @ 1.112 Aerated for 60 seconds Pitched dry, non-activated yeast in Stirred Used a large blowoff tube in the lid Bubbles formed every 10 seconds after 24 hours Bubbles formed every 5 seconds after 48 hours Let sit for 2 weeks (1/26/2014) Hyrdrometer reading 1.042 (~9.4% Alcohol) Added a small packet of Champagne yeast
