Taste Notes

3/24/14 - Been under 30psi for about 24hrs. Dialed back to 12. A -Tight creamy white head. Hazy gold (dry hop still in the keg prob isnt helping w/ that). S - Floral/tropical fruit, citrus, pine/wood. Aroma runs the spectrum of big, fat, hairy american hops. Simcoe carries through, but no one in particular dominates. T - Clean floral/pine (hemlock more like it) up front, middle goes a bit citrus, dank columbus builds toward the finish and lingers with lots of green onion/mustard greens. Very slight malt sweetness, but almost imperceptible. M- Medium body. A little hard to tell before carb settles in. O - This is all about hops. Delicate floral/citrus/hemlock turns to big dank columbus (definitely the green meanie in this equation). I usually like more malt backbone, but this is ok without. The only thing out of balance is the columbus. May be that the last dry hop addition balances this out, but right now the finish is a bit harsh compared to the delicate start. I'd bet columbus isnt Westbrook's bittering charge. 3/31/14 - keg is about 2/3 finished......this is really good. A - Straw yellow, slightly hazy, pours w/ a 1/2" tight head that fades to a ring, but leaves nice lacing. S - Floral, citrus, slightly woodsy. T - Sweet floral fades to hemlock/woodsy, citrus comes in toward the finish with a touch of dank green onion that lingers. Finishes dry and clean. M - Nice weight on the tongue, carbonation disperses some aromatics O - I'm waffling about saying the columbus is too powerful. Would have said definately earlier on, but the 2d dry hop has stepped up and the balance is very close. Replacing the bittering charge of columbus with cent or cascade might be the trick. Colu might be just a bit too aggressive for this floral, fruity, woodsy, session IPA. Westbrook has a bit less back-of-the tongue bitterness and maybe a bit more head retention. But, this is damn close and a mighty fine IPA in it's own right. Next time? - Try swapping Columbus for cascade.

Notes

A SWAG at Westbrook IPA. Grainbill constitutents are consistent with what's listed on their blog. They admit a Falconer's Flight dry hop (2 of em) and "4 varities of American hops" in 4 kettle additions. ABV 6.8 and IBU 62. Worried about getting veg from too much dry hop, so plan to do 1oz for 7d after primary winds down, rack to keg w/ 1oz in bag for 7d, then pull the bag and carb it. Update - no FF in stock at my fav interweb brewhaus. Substituted for 1/2 simcoe and 1/2 citra. This affects the FWH and DH additions. 3/23/14 - racked and kegged with the last dry hop addition. Put in the fridge w/ 30psi of gas. 6/29/14 - v1.3....back to the future. Keeping the hop schedule of the original and adjusting brewing water. v1.2 was missing some tropical fruit and pine. Too much Citra character for what I was aiming at. 11/7/14 - v1.3 Brew Day Hit mash temp of 148 spot on (not bad for rusty). Other numbers good. Gave primary 5 days to settle down, then added first dry hop. Left for 7 days, then racked to CO2 flushed keg w/ 2d set of dry hops. Tried to do a closed-system rack...which mostly worked. Filled keg w/ star san then emptied w/ CO2, attached carboy cap w/ racking cane then used CO2 to push beer into keg via its liquid fitting. Ended up using an auto-siphon for the last 1/3, but kept it connected to the keg liquid side. Hoping the DO2 stays absurdly low. Had to open the keg after flushing to add the keg hops (dunked those in star san very briefly first). Didnt want to put hops in before flushing the keg, worried about them soaking in star san that long. Let keg sit at room temp for 7 days, then into fridge and on 30# gas. Nice tropical fruit nose (melon in particular). Flavor similar w/ some citra-ness and spice, builds nicely to oniony columbus. A little open or empty feeling mid-palate at first. Promising now. Gas+time=? 12/21/14 - keg is almost finished. Very good reviews at statewide where this masqueraded as IFP IPA. This did not remain empty mid-palate like it started. Picked up a lot of nice floral/citrus aroma/flavor from the keg hops. May need to find a way to remove the keg hops or do second DH in fermenter. Seems like it peaked about 30d after it went into keg. Still very good, but has picked up some veg. Hop and grain bill are dang near spot on for what I was aiming at. May try DH with pellet hops next time, at least for second DH...easier to pull from keg without getting all oxygenatey. 1/10/15 - brew day Hit numbers pretty well. Actually got the grain bed to a legit sparge temp. Batch ended up a little larger than recipe predicts, but hit OG. Pellets for the citra FWH addition this time. Planning to add another 1/2oz of simcoe in the second DH cause, well, it was there. DH this time will be all pellets. Added first DH after 6 days. 2 days later, remembered to add the sugar. Had to sub in some Demerara sugar for about 2/3 of the 8oz addition b/c ran out of dextrose. Might add a wee bit o color, but don't expect it to make much difference. Solid. 5/3/15 - Brew Day Some more significant substitutions this time since LHBS forgot to put down the crack pipe and do inventory. Subbing Galaxy (pellets) for Amarillo in DH. Subbing WLP 002 for Wyeast 1318. Grains sat crushed for over a month, so used the entire 11# I had on hand. Hope to get away w/ a smallish starter made on stir plate on brew day. Sticking w/ all pellet DH. Losing less wort and no noticeable impact on flavor (good or bad). Very slow start to fermentation. Best by on the yeast was late June, but held onto this for a while after it came in and didn't do much of a starter... Infected batch!!1! Suspect Brett. Gave it some time to see if anything drinkable came of it, but alas, aroma was that of cooking beans. Undrinkable. Dumped. 12/6/15 - brew day. Used 10# of 2 row. All hop pellets. Trying gigayeast Vermont ale with no starter.
