Add 2/3 Spice at 1 miin from end of boil Check after primary ferment is complete for need for additional 1/3 of spice mix Spices should not be dominating, but a subtle footnote to the pumpkin flavour. Pumpkin cut into quaters and baked flesh side down until soft, juicy and juices are caramelised
