SCALED MY NORMAL 5.5 GALLON RECIPE TO FIT INTO ONE OF OUR 6 GALLON WHISKEY BARRELS. THIS IS WHY YOU SEE THE WEIRD HOP ADDITION AMOUNTS ( I DISLIKE SEEING A RECIPE WHERE THE END-USER HAS ANY LEFT OVER HOPS)... BAD RECIPE PLANNING IMHO!!! WE PLAN ON STORING THIS BREW IN A 6 GALLON BARREL FOR 3 WEEKS AND DIDN'T WANT ANY HEAD SPACE (O2 ISSUES) WITHIN THE BARREL. I DESIGNED THIS BEER FOR OPTIMAL BETA ENZYME CONVERSION (VIA 149 DEGREE MASH TEMPS), AND AM ACCOUNTING FOR SOME WATER EVAPORATION TO OCCUR DURING THE BARREL AGING PROCESS. * THE WATER THAT IS EVAPORATED FROM THE BARREL AGING PROCESS, SHOULD MAKE UP FOR ANY POSSIBLE CONCERN REGARDING 'MOUTHFEEL'; WHICH IS NORMALLY ASSOCIATED WITH LOWER MASH TUN TEMPS.
