70 oz LIbby's Pure pumkin -prior to baking @ 350 for 15 minutes...then 325 for 30 minutes, added and mixed the following: 1 TBSP cinnamon 2 tsp nutmeg 1 tsp ginger 1 tsp all spice 1 tsp ground cloves Mixed together using stand mixer then spread thinly into four pans...then sprinkled with cinnamon, nutmeg, cloves and all spice. BREW DAY Added 1/2 of pumpkin to mash water while heating water. During mashing, sprinkled cinnamon, nutmeg, cloves, ginger and all spice onto grain bed @ 50, 40 and 20 minutes. Sparged out 8 gallons to boil. Boiled 8 minutes before adding hops...( 1 oz of Tettnang @ 4.5% AA) @35 minutes added 2 cinnamon sticks and six whole cloves @30 minutes added: 1 TBSP cinnamon 3 TBSP brown sugar dash of all sprice (ran out) 2 tsp each of nutmeg, ginger and cloves Added remaining pumpkin to boil @ 25 minutes @20 minutes added: 1 /2 cut molasses 1/8 cut fake vanilla extract @15 minutes added 1 tsp each ground clove, nutmeg, ginger and cinnamon stopped timer @ 13 minutes after adding wort chiller Let boil for 5 minutes with timer stopped @2 1/2 minutes, added 16 oz of dark home made maple syrup ***September 10 - lost most of pumpkin flavor...too much spicing. Changed name to Naughty Pilgrim Spiced Autumn Ale.
