Notes

4th Jan 2018 6g Calcium Sulphate 3g Calcium Chloride Mashed in at 57 Degrees, dropped to 55C and let sit for 15mins Brought up to 61C for 40mins, Brought up to 63mins -for 20mins heated to 75C let it sit at 75C for 10mins to mash out. Began sparge with 14.3L water boiled for 90mins added chiller at 16mins to go, boil stopped for 1-2mins then resumed Added hops, found i had oppend the wrong Cryo Citra Pack so added 45g in the whirpool all up (the last 20g after 10mins of already whirpooling) Whirlpool was done in two stages: 1. 20mins at 77C with a drop to 74C 2. 10mins at 60C with a drop to 55C Began cooling as per normal Collected 1.060 at approx 21L. Let trub & hop matter sink to the bottom of the collection bottle - emptied to make room and avoide too much shit in the fermenter. Pitched 2L yeast starter of 3rd Generation WLP001 (28hrs on starter plate) along with Mangrove Jacks Dry Enzyme packet. Pitched into 22.5C wort, set temp to 21C on fridge (should be -0.5 cooler) 5th Jan after 12 hrs fermenter was at 2.5 Bar pressure (shit!) released down to 0.5 bar. sitting about 21.4C 6th Jan - fermentation is going crazy! smells awesome already Sitting about 21C (actual might be as low as 20C) 8th Jan - increased temp to 22C on thermostat - was sitting around 21.3) 9th Jan - still sitting around 21.6C - might raise 1 degree tomorrow 10th Jan - increased by 0.5C to 22.5C (Sample was 22C — thermostat was 21.5C) Gravity was 1.004!!! wtf. tasting very bitter and super dry - very carbonated already. Will Dry hop tomorrow i think.
