1.4 L starter for 3 days, then chilled and made new 1 L starter the day prior to brew day split between two carboys. If unable to get german wheat malt, use red wheat malt rather than white wheat. Used 10 lb red and 1 lb white wheat (used up all LHB red) Total gravity a little low. At end of sparge noted that 1/4 of the gran bed still had a puddle of water that was not draining. There was a thick protein layer on top and I think it prevented even sparging from this area. Next time periodically disturb the very top layer of the grain bed to ensure even sparging. Perhaps that's was TG was low? If I would have collected the total 12.45 called for my pre-boil gravity would have been 1.038 instead of target 1.042!
