Notes

Brewed 6/1/2013. Grain percentages: 56% Pils, 30% Torrified Wheat, 7% Flaked Oats, 7% Acidulated Malt. 1LB rice Hulls. All 0 minute spice & hop additions were done through a hop back. Wort chilled to 63F, 3 minutes of pure O2 w/ stone and set B3 conical to 64F. Increased 1 degree every 2 days until reaching 70F, Held at 70F 12 days after pitching. Ferment stuck at 1.015 at 12 days after pitching. Roused the yeast with pure CO2 forced in through the bottom of the conical at days 15 and 18, no additional gravity change. Created a fresh stir-plate starter of WLP570 and pitched at 70F on day 22. Dry hopped with .5oz Styrian Goldings. Set conical for 75F days 22-28. Prepared tincture on day 28: 2oz. Diesel 153 proof grain neutal spirits, 3g freshly crushed Indian Coriander seed and zest from 1 Valencia Orange and 1 Tangerine. Kegged on day 29. Dosed 1 of the 2 kegs with the tincture. Actual OG: 1.051, FG: 1.012, 5.1% ABV. 76% attenuation. Carbonate to 3 volumes CO2.
