No sparge, recirc @ 172*F for 15 minutes to sanitize Chil to 95*F and pitch lacto, wait a few days for pH to drop (3.5 target) pH after pre sour : 4.5 pH after one week: 3.35 Boil 15 min to kill lacto and add some hops Chill to 70*F and pitch wheat yeast Add watermelon essence at packaging time
