Mash de 75 minutos - 70 *C 15 minutos - 77 *C Fervura - 90 minutos 20 L água Viva Leve - início com 1g de ClCa++ 12 L de hot steep com 0,5 g de ClCa++ 04/08/17 Ph inicial H20: 6.7 Adicionei 10 gotas de ácido fosfórico - 5.7 Hot Steep: 4 gotas de ácido fosfórico e 0,3 de ClCa++ Hidratação levedura com 0.8L Viva Leve 2 oxigenações : após Chiler de 2 minutos e após 18 horas: 20 segundos 3 semanas - 18 e 19*C 2 dias em 12 1 semana - 5*C 5 dias - 2*C
