Notes

Missed target OG by 16 points likely due to under milled grain. Did not adjust boil hop additions to match new OG 1.054 MUST REMEMBER TO TAKE RUNNINGS AND PRE-BOIL GRAVITY IN FUTURE! Made good time chilling wort to 24C approx 45 mins then transferred fermenter into fridge and aerated for 1 hour + Pitched yeast 20C at 12am. Fermentation kicked off very quickly plenty of action in airlock within 16 hours. However seemed to slow to almost complete stop at 1.023?? First taste of wort nearing end of primary was intensely bitter. Boiled 2kg of DME into 2L of water and added to fermenter at 20C to adjust for 127 ibu! Fermentation started again quickly but again stopped at 1.023-4 Dumped loose dry hops into primary 10pm Thursday 29/6 (13 days after pitching yeast) Will let sit in primary on dry hops for 7-10 days before racking to keg and cold crashing
