Notes

Heated strike water to +5*F and it still was 2*F too low. Therefore added 1 Gal of 200*F water to hit 150. Mill setting was great. Got 78% efficiency. Added 5 mL lactic acid to the mash to get to 5.1pH Added 3 gm NACL and 17 Gypsum to the strike water as well. Sesh went really well, other than strike temp being low. Whirlpool 1.5 oz at 120-110 *F for 30 mins. Smelled amazing going into the fermenter. The day I dry hopped, there was still a bubbly head of crud on top of the fermenting wort. Gravity had stopped dropping but there was a tiny bit of airlock activity. I'll dry hop for 3 days then cold crash for 2 days, then gelatin, then keg.
