Taste Notes

This is fantastic stuff. In fact I think I'll have one right now, about eight months after brew day. Will it get better? Probably, but it's very drinkable now on tap with a high carb.

Notes

At first pitched 3 packs of yeast that were rehydrated in warm water for 20 min, per the yeast instructions. After about five days there was no airlock activity, so I opened the bucket and pitched four more packs of yeast directly. It did seem there was a bit of bubbling upon visual inspection before re-pitching. Within a few hours there was vigorous activity which lasted for several days. Noticable airlock activity continued for about two weeks.
