Taste Notes

This really had a similar yeast profile to "Raging Bitch", but with a porter. One of my finer efforts, and it was well enjoyed at a party with some dear friends.

Notes

Collected 4 gal of first runnings. Pre-Boil 1.048 @ 98F = 1.054 1.049 @ 90F = 1.053 Post-Boil 1.056 @ 68F = 1.057 Wort sat for two hours prior to pitching. Pitched two packs of T-58 in each carboy, waited 10 minutes, swirled, waited 10 more minutes and injected O2 for 1 minute in each carboy. Carboys are in water bath with towels and a fan blowing on them.
