Notes

First Runnings: 2.25 gal One big sparge instead of two batches. 9 gal ? Pre Boil: 12 gal, 1.030 @ 82F = 1.033 OG: Unknown, but figuring 0.5 gal lost in BK, boil off was about 6% and OG should have been 1.036 10.5 gal into Fermenters Pitched yeast while carboys were still somewhat warm, but had been put in a water bath with ice. Rigged up a paper towel and fan swamp cooler. Unfortunately the house's central A/C died just as I was starting this batch, so fermentation temperature may have fluctuated widely because of the record breaking heat wave. However at about 18 hours from pitching, in the evening, the water bath seemed reasonably cool to the touch. Added ice packs morning and evening. Temperature readings have been in the 65F to 68F range. Yielded 6.75 gal in one fermenter and 4.75 in another. Two full kegs. Hydrometer sample had a great roasty character and notable Fuggle spiciness.
