They both say they can do down to 60°F. I am open to either one, either with 55-60 textbook temps or 60-65 slightly more friendly temps. Since it will be on the low end, I imagine we will still get a clean profile, for that yeast. My thermostat's range is +/- 5°F.

Gramps, I posted my If It's Not Scottish, It's Crap! first draft. Scottish Ale yeast is the only one that says it likes <60°F and has high alcohol tolerance.
